Eleventh Anniversary

Friday was our 11th anniversary, which conveniently fell on a Friday. We went out for Mexican, my choice, and to see The Shooter, a joint decision. I wish I’d brought a click counter to keep track of all the dead bodies. At the very end of what turned out to be an explosive vigilante movie, Kevin turned to me and said. “What I really liked about this movie was the moral!”
He still can crack me up after all these years. And congratulations to all of you with way more years under your marriage belt, even if you are thinking, That young whippersnapper has no idea what a long time is!
One thing we observed about our everyday life is that we drive each other less crazy each and every year. By our fiftieth, I don’t think I’ll notice a bad thing about him! 😉
In honor of my man, who enjoys a good meal, I’m running a new recipe I just tried from the free Kraft magazine I get in the mail. Enjoy!

Marvelous Mini Meatloaves

Preheat oven to 375. Mix 1# extra lean ground beef, Stove Top (6 oz.) Stuffing Mix, 1 cup water, and the seasonings until well blended. Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of spoon.

Spoon add-ons evenly into indentations in meatloaves.

Bake 30 minutes or until meatloaves are cooked through (160 degrees). Tope evenly with cheese; continue baking 5 minutes of until cheese is melted. Let stand 10 minutes before serving.

Makes 6 servings of 2 meatloaves each.

Italian………….1 tsp. Italian seasoning…………… ¾ c. spaghettisauce………..¾ c. Mozzarella

Fiesta…………..2 tsp. chili powder…………………… ¾ c. chunky salsa………….¾ c. Mexican style

Mediterranean..1 tsp. dried oregano leaves…… ¾ c. chopped roasted red peppers……¾ cup crumbled Feta

BBQ……………….1 tsp. garlic powder………………….¾ c. barbecue sauce……..¾ cup cheddar

You can cook the same meal each week and not duplicate for a month! We tried the BBQ, but without the garlic, and loved it. The muff-loaves…the meatins…whatever you want to call them. The food was even better heated up for leftovers.
